INGREDIENTS:
45g shredded coconut – lightly toasted
1 lime – zest only
150g brown sugar
3 eggs
100g Greek firm set yoghurt
300g Self Raising Flour – sifted
125g strawberries – hulled and cut in half
- Preheat oven to 170 Celsius
- Lightly grease Wiltshire Flexible Loaf Pan (21 x 10 x 6.5cm pan) with butter
- Place; shredded coconut, lime zest, brown sugar, eggs, yoghurt and melted butter in a mixing bowl and whisk with a hand blended until combined
- Place the sifted self-raising flour in a separate bowl, using your hand, create a whole in the middle of the flour, then pour the yoghurt mixture into the whole
- Using a regular dessert spoon stir the mixture until all the ingredients are combined
- Place the halved strawberries on the bottom on the loaf pan round side down, spoon the mixture on top of the strawberries, place remaining strawberries on top of mixture, cut side up, tap the loaf pan on the bench a couple of times to ensure the mixture does not have any air pockets
- Place the loaf pan on a baking tray and then put the baking tray in the oven on the middle shelf
- Cook for 30 mins
- Reduce the heat and cover the loaf pan with foil and cook for another 15 minutes or until you insert a skewer into the middle of the cake and the skewer comes out clean
- Once cooked transfer the loaf pan to a wire rack and allow to cook for 15 minutes
- Turn the strawberry loaf out onto the wire rack and allow to completely cool before slicing and serving
SERVING SUGGESTIONS:
- Serve with a good quality butter like from our mate Pepe Saya
- Heat a non stick fry pan on medium heat, place sliced strawberry loaf into the fry pan add a little knob of butter and lightly toast on each side, serve with yoghurt, honey and some freshly chopped green apple
- You could substitute the strawberries for raspberries if you’d prefer, likewise if you don’t like coconut you can simply remove this and increase the self-raising flour by the same amount
- Keep any leftover loaf in a sealed plastic container and place in the fridge, enjoy within 3 days of baking
